Food Focus: Peanut Butter Cookies

Whenever anyone asks for a health/fitness routine I can’t help but giggle a little. When I cook for myself I’m super healthy and I hardly ever snack but the one thing I cannot resist is a baked good in some shape or form. Since moving out I’ve made it my mission to learn to bake all the things I love to buy ready made from stores and I thought I’d give you guys a peek into the recipes that get my thumbs up.

When I wanted to learn to bake peanut butter cookies I knew I couldn’t really go wrong. Anna’s cookie recipe is great and can be modified for different types of cookies so all I had to do was mix everything together correctly and remember to take the little beauties out of the oven.

Recipe

200g Unsalted Butter

200g Caster Sugar

1 Large Egg

275g Self Raising Flour

1/4 Jar of Peanut Butter (I went for smooth but if crunchy is your thang then roll with it)

They’re super easy to make – just mix everything together, roll the mixture into balls and pop them in the oven for 10 minutes (leave to stand for 20 – 30 depending on how hungry you are). I use a little less sugar than the original recipe as I just cannot bring myself to put that much sugar into my cookies, and they taste great. You can either create a peanut butter centre to the cookie or mix the peanut butter and unsalted butter together before adding the rest of the ingredients. They’re lovely either way.

The one thing to remember is that they grow enormously – I’d do three trays with 6 dough balls if I had the option, that way they remain single and slightly fluffier. Note: Being the clever clogs I am I managed to delete the final result – but trust me they were delishhh.

So what’s next? I’ve been trawling the ingredients list of Pret’s Love Bars (all time favourite sweet snack) as well as the back of Naked Cocoa and Orange bars. Pass me my apron – I’m hungry.
